Biryani
Description
Aromatic layered rice and chicken cooked with spices, onions, and yogurt—rich yet easy to make at home
Ingredients
- 400 g chicken pieces (thighs or breasts)
- 1 cup basmati rice, soaked for 15 min
- 2 tbsp yogurt
- 1 onion, sliced
- 1 tomato, chopped
- 2 green chilies (optional)
- 1″ ginger + 2 garlic cloves, minced
- 1 tsp garam masala
- ½ tsp turmeric, 1 tsp cumin, salt to taste
- 2 cups water
- 2 tbsp oil or ghee
- Fresh coriander or mint (optional)
Instructions
- Marinate chicken: yogurt + turmeric + garam masala + salt; set aside.
- Cook rice: boil soaked rice in water with salt until 70% done; drain.
- Sauté base: heat oil, sauté onions until golden. Add ginger/garlic, tomatoes, spices, chilies—cook 2 min.
- Add chicken: stir in marinated chicken, cook ~5 min until sealed.
- Layer: in same pot, add half rice, then chicken mix, then top with remaining rice and herbs.
- Steam: cover, cook on low heat 15–20 min until rice finishes steaming.
- Serve hot, garnished with herbs.
