Biryani

Description

Aromatic layered rice and chicken cooked with spices, onions, and yogurt—rich yet easy to make at home

Ingredients

  • 400 g chicken pieces (thighs or breasts)
  • 1 cup basmati rice, soaked for 15 min
  • 2 tbsp yogurt
  • 1 onion, sliced
  • 1 tomato, chopped
  • 2 green chilies (optional)
  • 1″ ginger + 2 garlic cloves, minced
  • 1 tsp garam masala
  • ½ tsp turmeric, 1 tsp cumin, salt to taste
  • 2 cups water
  • 2 tbsp oil or ghee
  • Fresh coriander or mint (optional)

Instructions

  1. Marinate chicken: yogurt + turmeric + garam masala + salt; set aside.
  2. Cook rice: boil soaked rice in water with salt until 70% done; drain.
  3. Sauté base: heat oil, sauté onions until golden. Add ginger/garlic, tomatoes, spices, chilies—cook 2 min.
  4. Add chicken: stir in marinated chicken, cook ~5 min until sealed.
  5. Layer: in same pot, add half rice, then chicken mix, then top with remaining rice and herbs.
  6. Steam: cover, cook on low heat 15–20 min until rice finishes steaming.
  7. Serve hot, garnished with herbs.
